Kala Sung has already taken the Copenhagen restaurant scene by storm. In this course she shares her take on the best of Korean cuisine.

In Europe, Korean cuisine has often stood in the shadow of other Asian cuisines. That is changing – and for good reason. Korea has an extremely rich culinary culture, where hundreds of years of cooking traditions, unique methods, and delicious dishes are very much alive. Together with American-Korean chef Kala Sung, you will prepare dishes like spicy braised pork, seafood pancakes, kimchi, and many other tasty creations that take you into the heart of Korean cuisine.
Kala will provide insights into Korean culinary traditions throughout the course. Kala is a lively and knowledgeable communicator with deep expertise in Korea’s food history and its connections to, for example, Japan and China.
You will learn to use key building blocks of Korean cuisine, such as the fermented sauces "gochujang," "doenjang," and "ganjang”, and how to incorporate these ingredients into Korean dishes – as well as use them as tools in other types of cooking.
You will also learn to make kimchi in the traditional Korean way. With the traditional methods Kala provides, you will be able to create and customize your own kimchi at home to your own taste.
Throughout the course, we will also prepare a variety of small dishes, including spicy braised pork, traditional pancakes, vegetable side dishes, soups, rice, and more – culminating in a rich and authentic Korean meal.
During the coooking class, you will be divided into smaller groups. If you are attending with others, we will do our best to place you on the same team. The course is taught in English.
